Fry the bacon in a large pot
When bacon is done, take out with slotted spoon and set aside.
Add onion, celery, and green pepper to the bacon grease and cook until tender.
Add ham, chicken, and sausage to the pot.
Add beef broth and chicken broth.
Season with thyme and Cajun seasoning. Bring to a boil.
When boiling, add rice.
Bring to a boil, then turn heat to low and cover. Let simmer for 20 minutes, until rice is tender.
Add bacon and shrimp just before serving and heat all the way through. If shrimp is uncooked, cook another 5 minutes.
